01 - Slice each croissant in half horizontally. Optionally, lightly toast halves in a toaster or oven for 2 to 3 minutes until warm and slightly crisp.
02 - Evenly spread softened goat cheese over the cut side of each croissant bottom.
03 - Arrange thin apple slices atop the goat cheese layer. Drizzle each croissant with 1 teaspoon honey.
04 - Sprinkle chopped walnuts or pecans if desired and add arugula or baby spinach for additional flavor and texture.
05 - Season with freshly ground black pepper according to taste. Place top half of croissant on filling and gently press together.
